Ingredients
- 1 lb package of bacon
- 1/2 bag of frozen mixed veggies (small veggies, like corn, carrots, green beans, peas.)
- 1 can of Spam, chopped (if you don't like Spam, substitute a cup of chopped ham or chicken. I just think Spam is the very best in this dish because it's salty and holds up really well.)
- 5 or so cups of day old, cooked rice (day old is really important, don't use rice you just made or you will be SUPER frustrated with sticky rice that won't fry)
- 4 eggs (optional)
- Sesame oil
- Soy sauce
- Chop up the bacon and cook it in a large skillet with tall sides until crispy. (A wok might be good here but I don't have one.) Divide in half and set aside.
- Drain the fat and KEEP it! Scrap off the crispy bits and the bottom and keep those too. Divide the fat in half, and place half back in the skillet and let the other half cool. Freeze half the bacon and half the fat so that when you want to make this again you can save yourself a step!
- Heat the bacon fat in the skillet over medium heat, and add the frozen veggies and Spam. Heat through.
- Add a tablespoon or so of sesame oil to the skillet.
- Start adding rice in one cup increments. The amount is entirely up to you, I usually make a lot of this stuff because it's one of my favorite.
- Turn the heat up to medium high and stir and stir and stir to incorporate the meat, veggies, and rice. Fry for 5-10 minutes, add more sesame oil if it starts to stick.
- This is where the eggs are added, so if you left those out skip the next two steps. When the rice is starting to get color, push it all to the sides of the skillet and create a well. (It will look donut shaped.)
- Crack the eggs in the well and let them set for a minute. Break the yolks and scramble them with your spatula in the well until they are half cooked, and then stir them into rest of the rice to finish cooking.
- Fry for a few more minutes until everything is cooked and heated through.
- Slowly add soy sauce to the rice. The amount you add is up to you, I love soy sauce so I add A LOT, like up to a half cup. But if you just wanna add a few tablespoons and it tastes good to you, that's fine!
- Add the reserved bacon and mix it in.
- Serve hot. I eat this stuff plain with no other dishes, but if you want to serve it aside orange chicken or something go for it.
Oh my gosh, I love this stuff. The bacon fat and sesame oil really add the flavor that makes it soooo delicious.

Yum, that looks good! We made some "cheaters" fried rice in the rice cooker last night which was pretty tasty actually! But I bet it wouldn't have anything on this recipe!
