Foodie Friday- Apple Pudding

Ok, so this is actually "pudding." It's much more cake-like. But whatever it is, it's delicious!! My mom has made it twice and it is soooo good. And I'm not really a sweets person. (I know, I know, shocker.) If you like caramel apples, and you like cake, you will LOVE this dessert.

The cake
Ingredients

  • 2 cups sugar
  • 1/2 cup butter
  • 2 eggs
  • 4 cups grated, peeled apple
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 2 cups flour
  • 1 cup chopped nuts (optional)

Directions
  1. Preheat oven to 350.
  2. Cream butter, sugar, and eggs; beat well.
  3. Stir in apples,
  4. Add dry ingredients and nuts.
  5. Pour into greased 9x13 pan and bake for 45 minutes until cake tests done.
  6. Serve warm (or cool, but it's sooo much better warm!) with yummy delicious sauce.


Yummy delicious sauce (caramel-like sauce)
Ingredients

  • 2 cups brown sugar
  • 1/2 cup Karo syrup
  • 1/2 cup butter
  • 1 1/2 cups cream

Directions
  1. Boil brown sugar, syrup, and butter for 2 minutes; stirring constantly.
  2. Remove from heat and let sit for 10 minutes. (If it sits too long, it will go hard, so time it!)
  3. Stir in 1 1/2 cups cream.
  4. Serve warm with yummy cake and whipped cream.

 Oh my GOSH this cake is good. I'm really not a sweets eater, but man do I love this pudding/cake.

  4. OMLordie, this looks sooo good! I will def. be making this! The recipe (even the sauce) reminds me of Sticky Toffee Pudding, which is just duh-vine!! I'm a sucker for apple desserts, too!
